  • ¼ cup quinoa, rinsed

Processing :

Combine the quinoa and water in a small saucepan. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer until the quinoa is soft and the liquid is absorbed, about 20 minutes or according to package directions. Let stand, cover for another 10 minutes.

While the quinoa is cooking, in a small frying pan over medium-high heat, warm the olive oil. Add the beans, corn, and cook, stirring and mashing slightly, until warmed through and tender. Add the bean mixture to the cooked quinoa and stir to combine.
